Tasty Roasted Vegetable Balsamic Salad

This can be a light meal for someone with a small appetite or someone who has had a few big meals that day and is not feeling too hungry. Alternatively you could serve this with a chicken breast and some brown rice.


Two cups of arugula leaves (rocket)

One cup of roasted beets

One cup of roasted pumpkin or sweet potato

Sprinkle of sesame seeds


Half a cup of olive oil

Quarter of a cup of balsamic vinegar

One teaspoon of honey

One teaspoon of dijon mustard

one shallot minced

one clove of garlic minced

salt and pepper to taste
